POSITION: Executive Chef
We are seeking a passionate and innovative Executive Chef to transform the food and beverage experience at Arusha Coffee Lodge into an unmissable attraction in the gateway city of Tanzania’s Northern Safari Circuit. Job Description
As the Executive Chef, you will take charge of all culinary operations, with a focus on delivering exceptional dining experiences that rival world-renowned destinations. Key responsibilities include:
1. Culinary Leadership
- Oversee all culinary activities and ensure creativity and innovation in food offerings.
- Lead the transformation of our new Market Garden Theme Restaurant, capable of serving up to 400 guests daily, while managing other diverse dining venues.
2. Restaurant Management
- Oversee multiple dining outlets, including:
- A fine-dining international cuisine restaurant.
- A bistro bar.
- A coffee shop.
- In-room dining services.
- Safari picnic lunches.
- The Outdoor Garden Theme Restaurant.
- Deliver authentic African dining experiences with world-class standards.
3. Menu and Budget Management
- Plan and design menus that cater to diverse guest preferences.
- Manage procurement, control food costs, and ensure adherence to budget guidelines.
4. Operational Excellence
- Run efficient kitchens while maintaining hygiene and safety standards.
- Control stock, minimize wastage, and ensure profitability across all outlets.
5. Staff Training and Development
- Train and mentor local staff, fostering talent and passing on culinary expertise.
6. Product Development and Compliance
- Adhere to Elewana’s product development plans, culinary standards, and audit requirements.
7. Guest Satisfaction
- Consistently deliver exceptional food quality and service, adapting to guest preferences and market trends.
8. Team Management and Reporting
- Maintain appropriate staffing levels, manage performance, and conduct employee appraisals.
- Prepare timely reports in line with Elewana policies.
9. Committees and Additional Duties
- Participate in committees and perform additional tasks as required by the General Manager.
Qualifications
We are looking for a dynamic and experienced leader with:
- Proven experience as an Executive Chef in high-end hospitality settings.
- A culinary degree or equivalent certification.
- Strong leadership, creativity, and innovation in menu planning and presentation.
- Deep knowledge of culinary trends and local ingredients.
- Commitment to exceptional food quality, service, and compliance with health regulations.
- Proven ability to achieve financial targets and control costs.
- Excellent communication, team-building, and management skills.
- Familiarity with Elewana policies and standards (or willingness to learn).
